This dessert for Strawberry Shortcake is made and served in a cute mason jar! The filling is made with a stabilized whipped topping and cream cheese, with a little bit of lemon zest thrown in.
Before I made this recipe, I spent plenty of time researching all the different ways Strawberry Shortcake can be made. I’m not sure if you have taken a look at Pinterest lately, however, it seems there are TONS of ways to produce this delectable dessert!
The cake base that holds the filling can be made from biscuits, cornbread, to even cake itself. And the filling? You can use anything from premade whipped cream to homemade whipped cream to even the kind of whipped cream you spray on ice cream.
This particular recipe uses vanilla wafers as the base. Which, when you think about it, is absolutely genius! When left in the fridge for a few hours, the wafers actually soak up the contents of the filling, just like they do in banana cream pudding. Really, this is just like that, except in strawberry shortcake mode.
The original recipe called for only three ingredients (vanilla wafers, stabilized whipped cream, and strawberries), however, I kicked it up a notch and decided to marinate the strawberries in granulated sugar. I also added cream cheese, powdered sugar, and lemon zest into the whipped cream.
I placed the word dreamy into the recipe title, because, well….it is dreamy! Sweet whipped cream filling infused with marinated strawberries and vanilla wafers?? If that isn’t a dreamy dessert, then I have no clue what is!
To make things even cuter, this it’s served in a mason jar. Yes. A stinkin, cute little mason jar! Which means it’s perfect for all of these spring and summer parties that may be penciled onto your calendar in the next few months. This strawberry shortcake dessert can be made in mason jars and is a quick and easy way to end your delicious dinners this summer!
- 1 cup chopped strawberries
- 1/2 tbsp. granulated sugar
- 1 cup stabilized whipped cream such as Cool Whip
- 2 tbsp. full fat cream cheese, room temperature
- 1 and 1/2 tsp. confectioner's sugar
- 1/4 tsp. fresh lemon juice
- 1/8 tsp. lemon zest
- 7 mini Vanilla Wafers
Mix together the strawberries and granulated in a small bowl. Let them sit for 5 minutes.
In a medium mixing bowl, combine the Cool Whip, cream cheese, confectioner's sugar, fresh lemon juice, and lemon size. Mix and stir until smooth and a little thick.
Place 7 mini vanilla wafers into the bottom of a glass mason jar. Place 1/4 cup of the Cool Whip filling on the top, followed by 1/4 cup of the chopped strawberries. Repeat layers until all the ingredients are used up.
Chill the glass in the refrigerator for up to an hour and a half. Serve immediately.
