Extra virgin olive oil
1 and 1/2
cups
jasmine rice
or other long grain rice

clove
garlic
minced
1 and 1/2
cups
chicken broth or stock
1 and 1/2
cups
water

tsp.
salt

lime
completely zested and with juice saved

tbsp.
lime juice
1/4
cup
fresh cilantro
chopped
Instructions
Rinse and drain rice up to 3 times.
Place rice, olive oil, minced garlic, chicken broth (or stock), water, lime zest, and salt in a rice cooker.
Stir the ingredients until well mixed.
Turn the rice cooker on and cook until indicator light states it's ready.
Stir the lime juice and chopped cilantro.
Serve with main meal.
