In a mixing bowl, rinse the jasmine rice in cold water about 15 times to reduce the amount of starches. Drain any excess water with a strainer and place the rice in a pot.
Add the coconut milk, 2 cups of water, salt, sugar, ginger, and cinnamon.
Bring the rice to a boil over high heat. Once boiling, turn the heat down to low and simmer for about 20 to 25 minutes.
