About Libby and The Family:
Once upon a time, I was a working woman, fresh out of college, who had dreams of climbing the ranks in the field of social work. I had it all. The apartment, the job, and the career. Then I met this handsome Army soldier and my world turned completely upside down. Instead of dreaming about having a plush office with a three story window view, I found myself dreaming about making my soldier every kind of flavor of pie imaginable, settling down, and starting a family. Well….my dream came true! One thing led to another and before I knew it, we were married and heading out to our first military duty station as a family.
8 years into our marriage and 2 children later, this site was born. My days are now filled with playing taxi driver to my kids and making recipes for everyone to test out and try. Oh….and doing dishes. Tons and tons and tons of dishes.
Hubby recently completed his 20 year active duty service and we decided to put down roots in a small, New Mexican town near Albuquerque. After living in the city for a few decades, our little family of 4 will be relocating to the country…mountain rural country. From what I have heard from friends and others who live there, it’s a completely different world.
I’m not sure how we are all going to adjust to country life, however, I do know that it probably will be an adventure!
About The Blog:
Started back in 2009, Cooking With Libby was a place for me to document our family’s favorite recipes and share them with other family members and friends who lived far away. Due to us being military, it also served as a way to keep everyone up to date with what was going on with us as a family. It was an online scrapbook of sorts, detailing the ups and downs of our lives with a recipe to go along with each post.
As my children grew in age, so did this site. Unbeknownst to me, others from all around the world were tuning in and reading the posts as well. What started out as a place to document our family’s growing recipe collection and memories had blossomed into a tool for readers to learn how easy it was to cook from home.
I quickly figured out that the combination of the four things that I love (cooking, baking, writing, and family) can be extremely helpful to those who may need assistance in the kitchen.
In August of 2015, after 6 years of being live on the internet, I decided to turn this site into an official LLC and I now run it on a part time basis.
What You’ll Find Here:
- Recipes that have less then 8 ingredients (not including salt, pepper, butter, eggs, water, and flour), have simple steps to follow, and are focused on being delicious and comforting.
- Recipes that come equipped with time saving tips at the bottom of each card.
- Culinary tips and hacks to make cooking just a tad bit easier and less time consuming.
- Suggested menus for holidays and entertaining so you won’t have to worry about planning.
- Family memories/stories to go along with most of the recipes, so you feel a connection when you make them.
- Real recipes that are taste tested by my crew of loved ones and that use everyday ingredients that can be found in most grocery stores across the country.
