4 more weeks until my children are out of school for the summer. 4 more weeks! This means mommy has 28 days to think of a ‘game plan’ for the up and coming summer months. It’s been so busy and chaotic around here that on some days, I can’t even fathom the thought of planning out a schedule for June, July, and part of August. Alas, the ‘mother’ in me will probably start concocting something soon!

Maybe we’ll sit by the pool all summer and snack on these little gems of goodness. I can totally picture it in my mind! These Cream Cheese and Mango Salsa RITZwiches are the perfect snack to pack on hot summer days. With only three ingredients, they are pretty darn easy to make. Assembling them literally only takes a few minutes. Just spread a dollop of cream cheese onto the cracker, then pile on a tablespoon of this awesome Farm Fresh Made Mango Salsa from Albertsons. It really is that simple!

This salsa….is the best darn salsa with fruit that we have tasted. Ever! Fresh mangos make up the obvious main part of it. However, the mixture is also made up of chopped red onions, diced tomatoes, green peppers, and cilantro. There’s also a hint of spiciness to it as well. When you place all of these ingredients on top of a buttery RITZ cracker and cream cheese, perfection will be calling out to you!

They are tasty, easy to make, and cost effective. What more can you ask for? So……my advice? Run to your local Albertsons and purchase the ingredients. Then make them for your family! Our family LOVED them so we know your family will as well!

Ingredients

  • 12 RITZ crackers
  • 3/4 cup cream cheese softened
  • 3/4 cup Albertsons Farm Fresh Made Mango Salsa

Instructions

  • Lay individual RITZ crackers on top of a serving plate or dish.
  • Spread one Tablespoon of cream cheese onto the top of each cracker.
  • Top each cracker with one Tablespoon of salsa.
  • Serve immediately.

If you are planning on transporting these, I would wait to assemble them once you arrive at your destination site. Make sure to store ingredients inside a cooler for food sanitation purposes.
