Easy Peasy Cheesecake
1 store bought Graham Cracker Crust (or make it from scratch- see below)
2 blocks Cream Cheese, softened
1 cup Sugar
½ Tablespoon Vanilla Extract
½ Tablespoon Lemon Juice (optional)
Mix cream cheese, sugar, vanilla and lemon juice in a mixer. Add eggs one at a time to the mixture and thoroughly combine (you really can’t over mix this). Pour into pie crust.
Bake for 10 minutes at 450 degrees (F). Then, reduce temperature to 200 degrees (F) and bake for additional 45 minutes.
Chill in the refrigerator a few hours before serving. Optional: top with cherry or strawberry pie filling or drizzle with caramel sauce.
To make crust from scratch:
1-¼ cup Graham Cracker Crumbs (Homemade Or Store-Bought)
3 Tablespoons Sugar
1/3 cup melted butter
Mix the graham cracker crumbs, sugar and melted butter and pack mixture firmly into bottom and sides of 9-inch pie pan. Chill in the refrigerator while preparing the filling.
I hope some of y’all will stop by The Country Cook blog and say hello. I’d love to have you visit!
**Libby’s Notes: Our family LOVES this recipe. We make it with the already made graham cracker crust and serve it with cherry pie filling on top!**
