As some of you may know from my Facebook posts, I am taking a ‘blogcation’ so to speak. The kids and I are up here in the wonderful state of Colorado for a little R & R and also to help my sister prepare for the birth of her daughter. I couldn’t just leave y’all hanging though so I took the liberty of lining up some awesome guest posters while I am gone 😉
I must say, ever since Facebook made things to where you can actually communicate with other Fan pages of your interest, I have gained quite a few foodie friends. Brandie or Bran as some like to call her, is one of them. I love her blog because it’s full of down home country cookin and every time I visit over there, the pictures on her sidebar make me drool because they look sooooo good 😉 Besides food, her and I have a connection, with her being Military Brat and a former Military Spouse. These connections are very special and very hard to find now a days 🙂 She has two sons, one of whom is a few months older then my daughter, so we can relate to each other on that level too. Her cooking is very similar to my style of cooking….simple country comfort…which is why I’m so pleased to announce her visit here today……..

Hello everyone! First let me start off by saying a big THANK YOU to Libby for letting me have some fun on her blog today. It is such a special treat to be here and to have a chance to share a recipe I hope y’all will really enjoy. Libby has become such a good friend to me in this food blog world and I am so grateful to her for this opportunity.
My name is Brandie, the cook over at The Country Cook. I live in beautiful Southwest Virginia near the Appalachian mountains. I’m a jack-of-all-trades, like most women. I’m a momma and a wife. I also work part-time outside the home. I love to make comfort food and I like to eat it (who doesn’t?). I do my best to get supper on the table every night – which can be a challenge some nights. My food may not be considered gourmet or fancy but it feeds my family and it gathers us around the table each day. I cook a lot of the same foods my own Mom made and if my husband and son are real quiet while they eat– then I know I did good. And those are the recipes I share with everyone.
So, let’s get to the food, shall we? I am bringing my family’s most favorite dessert. It is the one dessert we all agree on without fail. And you won’t believe how easy it is to whip up with just a few ingredients.
Forget about all those cheesecake recipes from the past where you had to leave the oven door open for 5 hours after baking so the cheesecake could set. This recipe has an easy baking method that takes all of the scariness out of making cheesecake.
Easy Peasy Cheesecake
(makes one 9 inch cheesecake)
Ingredients:
1 store bought Graham Cracker Crust (or make it from scratch- see below)
2 blocks Cream Cheese, softened
1 cup Sugar
½ Tablespoon Vanilla Extract
½ Tablespoon Lemon Juice (optional)
2 Eggs
Directions:
Mix cream cheese, sugar, vanilla and lemon juice in a mixer. Add eggs one at a time to the mixture and thoroughly combine (you really can’t over mix this). Pour into pie crust.
Bake for 10 minutes at 450 degrees (F). Then, reduce temperature to 200 degrees (F) and bake for additional 45 minutes.
Chill in the refrigerator a few hours before serving. Optional: top with cherry or strawberry pie filling or drizzle with caramel sauce.
To make crust from scratch:
1-¼ cup Graham Cracker Crumbs (Homemade Or Store-Bought)
3 Tablespoons Sugar
1/3 cup melted butter
Mix the graham cracker crumbs, sugar and melted butter and pack mixture firmly into bottom and sides of 9-inch pie pan. Chill in the refrigerator while preparing the filling.
