Hello everyone! I hope every one’s week is going well 🙂 The kids and I will be leaving Colorado today 🙁 We’ve had a fun time here, however I think we are ready to come back to good ole’ Louisiana 😉 I have one more guest poster lined up for everyone today.

I’ve been a follower of her blog for a very, very, very long time. Back before Facebook even became popular…lol…to be exact. I came across her blog back in 2008 while looking for a recipe for a casserole dish. I don’t remember which recipe it was, however, I have been hooked on her blog ever since. She was actually my inspiration for starting my blog back in 2009 🙂 Her and I have lots in common and we really enjoy cooking up similar dishes. She is also a former Military wife and an added bonus…..only lives 3 hours away from me 😉 We keep telling each other we will get together soon to cook up a meal and when we do, we’re going to have so much fun! Y’all better watch out if that happens 😉 Her kids are so adorable and I just love her to death!

Hello everyone! First off I want to thank Libby for asking me to guest post at Cooking with Libby. I have to say as soon as she asked me my immediate response was yes. I just adore Libby! But I don’t have to tell you that because if you’re a reader of Libby’s Bog then you already know that. I don’t even recall how Libby and I met. I just know one thing, we instantly clicked. I always say Libby and I go together like peas and carrots. We have the same cooking style and we both love home cooking and comfort food. I mean is there any thing better than that? If you ask me the answer is no.
Here is a little bit about myself. I’m a wife and mother of three of the best kids around (don’t all moms say that LOL). Travis who is 17, Mackenzie’s 11 and my little guy who will not be so little soon will be 8 in just a few short weeks. We live in Texas and I consider myself a southern girl through and through. A lot of folks don’t think Texas is a part of the south, but in my opinion it’s not about where you live, but more about who you are.
My daddy was a southern boy from Alabama and my mother is German. So you can see where I got my southern roots from. My mother is a self taught cook who passed her love of cooking onto me. Cooking is the one thing I am trying to pass down to my children. No worries there because they love to cook as much as I did as a little girl.
Today I want to share a recipe that will get your kids cooking in the kitchen with you. Not to mention that this recipe is very kid friendly.
It’s for Kid Size Personal Pizzas. My kids love these little pizza’s and I have to admit so does Mommy. One because they are so easy to prepare and two because they are just so darn good. My kid’s can be so picky especially Carson, so we have to try and incorporate a few Kid Friendly meals into our menu. These little pizza’s are a great way to get the kids to help you out in the kitchen. My kiddos love being in the kitchen with me.
What I love most about this recipe is that each person can make their very own personal pizza just the way they want it. Carson and Mackenzie are big Cheese fans, so cheese and a few pepperonis is usually all they put on theirs. But for everyone else the sky’s the limit. These little guys are the perfect size for small little hand’s.
I love to make these for birthday parties and sleepovers. All the kids love making their very own pizza with all their favorite toppings. Once the pizzas are loaded up with all the different toppings these yummy little guys can be quite filling. So go grab your kiddos and let them have some fun in the kitchen making their very own personal pizza’s. I hope that you can take a minute and pop over to my blog. I’ll set an extra place at the table because we would love to have you.
Kid Size Personal Pan Pizzas
(makes 12 personal pizzas, or six of you use two per person)
Ingredients:
1 – 12 count package frozen dinner rolls, thawed
1 – 14 oz jar of pizza sauce or use homemade
1 – 12oz package mozzarella cheese
Pizza Toppings of your choice: (pepperoni, hamburger, sausage, cooked chicken, Canadian bacon, regular bacon, black olives, onions, green peppers, or a variety of your favorite cheese)
Baking spray or olive oil
Directions:
Make sure to use the frozen yeast dinner rolls (thaw and rise variety) Pre-heat the oven to 200 degrees. Coat the bottom of your baking sheet with non-stick cooking spray or a coat of olive oil (a must here). Lay out as many thawed rolls as you want, leaving at least 3 inches apart. Once the oven is pre heated shut it off and put the cookie sheet inside. Let it sit for half 30 minutes exactly.
After thirty minutes remove the baking sheet from the oven and flatten each roll into mini-circles. (I just use my hands) Add about a tablespoon or two of pizza sauce on each one. Top with whatever pizza toppings and cheese that you want. Place the baking sheet back into the oven and bake at 350 degrees for 12- 15 minutes or until the cheese is melted and the crust is cooked through. Let cool and serve.
**Libby’s Notes: We use Rhode’s White Dinner Rolls and usually 2 per person does the trick! Use left over spaghetti sauce if you don’t have any pizza sauce on hand.**
