Grandmother’s Pound Cake

Hello everyone 😉  Today is Friday and it has been one heck of a week over here in our neck of the woods.  Guess you can say that the kids and I have been trying to get re-adjusted to life down here after being away for 2 weeks.  Normally I only post one dessert post per week, however, I haven’t actually had time to cook the meals that have been on our menu.  I did, however, manage to bake this lovely pound cake and I thought to myself, “This will be something lovely to share with my readers.”

I cannot take full credit for this recipe.  This came from the lovely folks over at Gooseberry Patch.  When I laid my eyes on this recipe, I couldn’t believe it!  A pound cake with just 5 ingredients??  Was it even possible??  I have seen other pound cake recipes that call for at least 7 or 8 ingredients, so reading this one really made me want to try it.
This was so simple, so easy, and so very delicious!  Pound cake is very versatile and the possibilities are endless as to what you can do with it.  Bake it up and serve it with some strawberries and whipped cream.  Or serve it with some coffee as a morning treat or an evening dessert.  Either way, enjoy it 😉   I made a few adjustments to the original recipe and added in some ingredients.  Hope y’all enjoy it 😉

Grandmother’s Pound Cake

(makes one 9×5 loaf)

Ingredients:
1 cup butter, softened
1 and 1/3 cup sugar
5 eggs
1/4 tsp. vanilla extract
1/4 tsp. almond extract
2 cups all purpose flour
Directions:
1.  Beat butter and sugar until creamy.  Blend in eggs, vanilla extract, and almond extract.
2.  Gradually mix in flour and pour into a greased and floured 9 x 5 inch loaf pan.
3.  Bake at 350 degrees for one hour.
4.  Decrease baking time down to 330 degrees and bake for thirty more minutes.
**Libby’s Notes:

After the first hour, the side will turn dark brown. Do not worry.  Just keep baking it.  The crack in the middle that will form is also typical of the recipe.  If you don’t have any almond extract on hand, using 1/2 a tsp. of vanilla extract will work just as well 😉 Recipe Source:  Gooseberry Patch’s Magazine, 5 Ingredient Dishes in Minutes

      For a glaze like on cinnamon rolls, melt 3tbl of butter add tbl of vanillia stir in 3 c of powdered sugar and 2-3 tbl of milk whisk together. If too thin add more powdered sugar if too thick add more milk. Would probably taste good with a little orange extract

  2. Amanda, unfortunately I do not have an icing or glaze recipe. I just normally heat up some strawberries, mash them up, and add lemon juice and sugar to taste. If you pair that with some whipped cream…that would make an awesome dessert 😉

  9. I made this recipe, as I also bought that gooseberry patch recipe book. It turned out wonderful. You can make a strawberry glaze: 1 cup sugar,1 cup water, 1 Tablespoon cornstarch. Heat until thick. Take off stove, add 3 Tablespoons of strawberry jello and stir in. Then cut up strawberries and once glaze is cool, mix strawberries and glaze serve on top of this pound cake and there you go a wonderful dessert. Quick and easy.
