Cilantro Lime Rice
If you need a side dish to compliment your main meal, this Cilantro Lime Rice is it! Made with only 8 ingredients, it is an easy recipe to make when you are low on time. We love it so much that it’s been added to our collection of Simple Rice Recipes!
It can be served with either a Mexican OR an Asian dish which makes it’s versatility top notch. You can easily double the amount of ingredients to feed a crowd as well.
The cilantro and lime give it a southwest vibe while the garlic and pepper add a bit of an Asian twist. We have been known to also add green chile to it for an extra special New Mexican kick!

Ingredients and tips for making this Lime and Cilantro Rice
Wondering what you need to make this rice? I got you covered below!
- Olive Oil: Do not skip this ingredient. Olive oil gives it a smooth texture and brings out the savoriness.
- Jasmine Rice: Of course it wouldn’t be normal without this ingredient. You can also use basmati or another long grain rice.
- Garlic: Just like olive oil, you don’t want to skip this. The garlic works in tandem with the oil.
- Chicken Broth: This is a wonderful ingredient to use when you make rice. It takes the flavor up a notch or two. You can use water instead if you do not have any on hand.
- Lime: You will need both the juice and the zest from a fresh lime. If you don’t have fresh, you can just use lime juice.
- Cilantro: We love to use fresh cilantro, however, the dry version works just as well. Just use a teaspoon versus a cup.
What are the best broths and stocks to cook with rice?
We prefer to use chicken broth while cooking our rice instead of water. This gives it a nice, flavorful taste without being overly seasoned. Chicken and rice make a perfect combination and compliment each other well.
Can you freeze rice?
You absolutely can freeze rice. Let it come to room temperature after cooking. Then place it in glass container with a secure lid. Label the lid with a sticky label, making sure to put the date. Place in the freezer until ready to consume. You should eat it within 2 months.
How do you defrost frozen rice?
Take it out of the freezer and place in the fridge overnight. You can heat in the microwave for about 8 minutes. If it is dry, adding a bit of water will soften it up.
What brand of rice cooker do you recommend?
We use an Aroma 6 Cup Rice Cooker to make ours. It has lasted us a long time (at least 10 years) and is super simple to operate. It also comes with a steamer bucket so you can add another ingredient while your rice is cooking.

The following items are what I use daily and/or weekly in my kitchen. They are affiliate links and will not change the sale price.
Ingredients
- 2 tbsp. Extra virgin olive oil
- 1 and 1/2 cups jasmine rice or other long grain rice
- 1 clove garlic minced
- 1 and 1/2 cups chicken broth or stock
- 1 and 1/2 cups water
- 1 tsp. salt
- 1 lime completely zested and with juice saved
- 3 tbsp. lime juice
- 1/4 cup fresh cilantro chopped
Instructions
- Rinse and drain rice up to 3 times.
- Place rice, olive oil, minced garlic, chicken broth (or stock), water, lime zest, and salt in a rice cooker.
- Stir the ingredients until well mixed.
- Turn the rice cooker on and cook until indicator light states it's ready.
- Stir the lime juice and chopped cilantro.
- Serve with main meal.
